  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 4 cups vegetable broth Ensure it's fully plant-based certified for vegan version.
  • 2 cups diced tomatoes
  • 1 can (15 oz) beans (chickpeas, kidney beans, or black beans), drained and rinsed
  • 2 cups mixed vegetables (spinach, corn, green beans, or combination)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme, basil, or oregano

Method
 

Preparation
  1. Add chopped onion, carrots, celery, vegetable broth, diced tomatoes, beans, and mixed vegetables into the crockpot.
  2. Sprinkle garlic powder, dried herbs, salt, and black pepper evenly over the ingredients.
  3. Stir thoroughly to combine flavors.
  4. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until vegetables are fork-tender.
  5. Taste and adjust seasoning if needed before serving.
  6. Ladle into bowls and serve hot.

Notes

For extra flavor, add bay leaf during cooking or blend one cup of the soup for a thicker texture. Use low-sodium broth to control salt levels.
