  • 1 cup full-fat coconut milk or cashew cream For best dairy-free richness

Method

Preparation
  1. Peel and dice potatoes into evenly sized pieces for consistent cooking.
  2. Add potatoes to the crock pot in an even layer.
  3. Sprinkle ranch seasoning evenly over potatoes.
  4. Add shredded cheddar cheese and crumbled bacon.
  5. Pour broth over all ingredients until just covered.
Cooking
  1. Cover and cook on low for 7–8 hours or high for 4 hours, until potatoes are fork tender.
  2. Stir in heavy cream and season with salt and pepper.
Finishing Touch
  1. Blend part of the soup using an immersion blender for thicker texture while keeping some chunks.
  2. Serve hot with preferred garnishes.

Notes

For a fuller dinner, serve with crusty bread or salad. You can add diced jalapeños for spice, stir in spinach or kale, or use cauliflower for a lighter option. Adjust ranch seasoning gradually to control saltiness and let soup rest before serving to thicken naturally.
