Ingredients
  

Main Ingredients
  • 1 lb Hominy, canned (rinsed and drained)
  • 2 cups Plant-based protein (e.g., Daring vegan chicken, chickpeas, or white beans)
  • 6 cups Vegetable broth (low-sodium)
  • 1 medium Onion, diced
  • 4 cloves Garlic, minced
  • 1 can Diced tomatoes Fire-roasted for a smoky touch
  • 1 teaspoon Cumin
  • 1 teaspoon Dried oregano
Garnishes
  • to taste Lime wedges
  • to taste Radishes, sliced
  • to taste Shredded cabbage
  • to taste Fresh avocado, sliced

Method
 

Preparation
  1. Place the hominy, plant-based protein, vegetable broth, diced onion, minced garlic, tomatoes, cumin, and oregano into your slow cooker.
  2. Season with salt and pepper to taste.
Cooking
  1. Cover the lid and set to LOW for 6–8 hours.
  2. If using a vegan chicken alternative, remove pieces briefly to shred them before stirring them back into the stew.
Serving
  1. Scoop the hot stew into bowls and garnish generously with lime, radishes, cabbage, and avocado.

Notes

For deeper flavor, sauté onions and garlic for 5 minutes before adding them to the crockpot. A mushroom-based broth provides a richer taste.
