Preparation
- Place the hominy, plant-based protein, vegetable broth, diced onion, minced garlic, tomatoes, cumin, and oregano into your slow cooker.
- Season with salt and pepper to taste.
Cooking
- Cover the lid and set to LOW for 6–8 hours.
- If using a vegan chicken alternative, remove pieces briefly to shred them before stirring them back into the stew.
Serving
- Scoop the hot stew into bowls and garnish generously with lime, radishes, cabbage, and avocado.
Notes
For deeper flavor, sauté onions and garlic for 5 minutes before adding them to the crockpot. A mushroom-based broth provides a richer taste.
