  • 2 cups cooked butter beans (canned, drained and rinsed) Use high-quality canned for better texture.
  • 2 tablespoons extra-virgin olive oil Adds heart-healthy fats.
  • 1 medium yellow onion, finely chopped Sauté for flavor.
  • 3 cloves garlic, minced Adds fragrance.
  • 1 can diced tomatoes (14 oz) Fire-roasted for deeper flavor.
  • 1.5 cups vegetable broth Adjust thickness if necessary.
  • 1 teaspoon smoked paprika Provides rich flavor.
  • 1 teaspoon dried oregano Enhances aroma.
  • to taste Salt and black pepper Season to preference.
  • 1/4 cup heavy cream (optional) Use coconut cream for vegan option.

Method
 

Preparation
  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and cook for 3–4 minutes until soft.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Add diced tomatoes, broth, smoked paprika, oregano, salt, and pepper. Stir well.
  5. Bring to a gentle simmer and cook for 5 minutes to reduce slightly.
  6. Fold in butter beans and simmer uncovered for 8–10 minutes until sauce thickens.
  7. If using cream, stir it in during the last 2 minutes.
  8. Taste and adjust seasoning.
  9. Remove from heat and let rest for 3 minutes before serving.

Notes

Store in an airtight container for up to 4 days. Freezes well for up to 3 months. Reheat on stovetop with a splash of broth, avoiding overheating to prevent beans from breaking.
