Preparation
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and cook for 3–4 minutes until soft.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add diced tomatoes, broth, smoked paprika, oregano, salt, and pepper. Stir well.
- Bring to a gentle simmer and cook for 5 minutes to reduce slightly.
- Fold in butter beans and simmer uncovered for 8–10 minutes until sauce thickens.
- If using cream, stir it in during the last 2 minutes.
- Taste and adjust seasoning.
- Remove from heat and let rest for 3 minutes before serving.
Notes
Store in an airtight container for up to 4 days. Freezes well for up to 3 months. Reheat on stovetop with a splash of broth, avoiding overheating to prevent beans from breaking.
