Preparation
- Lightly grease the slow cooker with olive oil if using.
- Spread plant-based beef bites evenly at the bottom.
- Add halved baby potatoes in a single layer.
- Melt butter in a saucepan over medium heat.
- Add minced garlic and sauté for 60–90 seconds until fragrant.
- Remove immediately from heat to prevent burning.
- Pour garlic butter mixture evenly over beef bites and potatoes.
- Season with salt and black pepper.
Cooking
- Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours.
- Stir gently once halfway through cooking.
- Cook until potatoes are fork-tender and coated in sauce.
- Garnish with chopped parsley before serving.
Notes
This dish is perfect for meal prep and reheats well. For vegan success, choose high-fat vegan butter for creamier sauce. Pair with roasted broccoli or green beans, or a crisp green salad. You can add quinoa for extra protein.
