  • 1 lb plant-based beef-style bites (soy or pea protein) Ensure it's 100% vegan-certified.
  • 1 lb baby potatoes, halved evenly Cut evenly for uniform cooking.
  • 1/2 cup butter Replace with full-fat vegan butter for a vegan option.
  • 5 cloves fresh garlic, finely minced Fresh garlic is recommended for stronger aroma.
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon chopped fresh parsley For garnish.
  • 1 tablespoon olive oil (optional) Use to grease the slow cooker.

Method
 

Preparation
  1. Lightly grease the slow cooker with olive oil if using.
  2. Spread plant-based beef bites evenly at the bottom.
  3. Add halved baby potatoes in a single layer.
  4. Melt butter in a saucepan over medium heat.
  5. Add minced garlic and sauté for 60–90 seconds until fragrant.
  6. Remove immediately from heat to prevent burning.
  7. Pour garlic butter mixture evenly over beef bites and potatoes.
  8. Season with salt and black pepper.
Cooking
  1. Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours.
  2. Stir gently once halfway through cooking.
  3. Cook until potatoes are fork-tender and coated in sauce.
  4. Garnish with chopped parsley before serving.

Notes

This dish is perfect for meal prep and reheats well. For vegan success, choose high-fat vegan butter for creamier sauce. Pair with roasted broccoli or green beans, or a crisp green salad. You can add quinoa for extra protein.
