Preparation
- Add all dressing ingredients to a blender or food processor.
- Blend until smooth and creamy, adjusting thickness with water.
- In a bowl, combine chopped romaine, cucumber, carrots, red onion, and sunflower seeds.
- Add 3–4 tablespoons green goddess dressing and mix well.
- Toast bread lightly if desired.
- Spread a thin layer of dressing on each slice.
- Layer spinach or microgreens on one slice.
- Add a generous scoop of the salad mixture.
- Top with sliced avocado and close sandwich.
- Slice diagonally and serve immediately.
Notes
Store dressing separately up to 3 days. Assemble just before eating for best texture. Avoid storing fully assembled sandwich longer than 4 hours.
