Ingredients
  

For the Cake
  • 2 cups all-purpose flour (240g)
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • tsp ground ginger
  • ½ cup neutral oil (120ml)
  • 1 cup granulated sugar (200g)
  • ¼ cup brown sugar (50g)
  • cups unsweetened applesauce (368g)
  • 2 large eggs Can be replaced with 2 flax eggs
  • 1 tsp vanilla extract
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup raisins (optional)
Optional Glaze
  • 1 cup powdered sugar
  • 2–3 tbsp plant milk
  • ½ tsp cinnamon
  • ½ tsp vanilla extract

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Grease and line a 9 × 13-inch pan.
  2. Whisk flour, baking soda, baking powder, salt, and spices in a bowl.
  3. Mix oil and both sugars until combined.
  4. Add eggs and beat until smooth.
  5. Stir in applesauce and vanilla extract.
  6. Gradually fold dry ingredients into wet mixture. Mix just until combined.
  7. Fold in nuts and raisins if using.
  8. Pour batter into prepared pan and level evenly.
Baking
  1. Bake for 35–40 minutes until a toothpick comes out clean or with moist crumbs.
  2. Cool completely before glazing or slicing.

Notes

Store covered at room temperature up to 3 days. Refrigerate up to 7 days. Freeze unfrosted cake tightly wrapped up to 3 months. Thaw at room temperature before serving.
