  • 4 large Russet or Yukon Gold potatoes, peeled and diced Yukon Gold potatoes add a naturally buttery flavor.
  • 1 medium yellow onion, finely diced
  • 3 cups vegetable broth Ensure it's gluten-free if necessary.
  • 1 cup plant-based cream (unsweetened oat or cashew) Use unsweetened for optimal flavor.
  • 1 cup shredded vegan cheddar cheese Choose high-melt vegan cheddar for smoother consistency.
  • 1/2 cup vegan bacon bits Adjust amount to taste.
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh chives or green onions For garnish.

Cooking
  1. Add diced potatoes, chopped onion, and vegetable broth to the crock pot.
  2. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until potatoes are fork-tender.
  3. Use a potato masher to mash part of the potatoes directly in the pot to create a thick base.
  4. Stir in plant-based cream, shredded vegan cheddar, and vegan bacon bits.
  5. Season with salt and black pepper.
  6. Cover and cook for an additional 30 minutes on LOW to allow flavors to combine.
  7. Stir gently before serving.
  8. Garnish with chopped chives or green onions.

Notes

For a deeper cheesy flavor, add 2 tablespoons nutritional yeast. Let soup rest 5–10 minutes before serving for thicker texture.
